A Kerala version of Chennai taste (Katthirikkai Kuzhambu). Small eggplant or chunks of slightly larger eggplant roasted and made into a mixture with paste made from ginger-garlic paste, chili powder, tamarind sauce and other spices.
A must of Kerala Sadya (vegetarian feast). Aviyal is many different vegetables cooked together in coconut, green chilies, jeerakam and curry leaves paste. Add to this mixture, a touch of sourness from yoghurt or mango or tamarind, Aviyal is perfected.
Traditionally made with Pumpkin and Peas, Erussery is an essential item of sadya. This dish is made with coconut, jeerakam, green chilies and curry leaves. For added flavor (which makes Pumpkin & Peas turn into Erussery), grated coconut is roasted with curry leaves and onion slices and added to the mixture.
